What do people mean when they say there are symbolism in Disney movies? Like what movies, examples of what?
ive heard people say that the mad hatter was using controlled substances, and something about ariel's castle....?

I really wouldn't call it "symbolism", just things that are hidden in the movie or maybe misconstrued in some way.
"Alice in Wonderland" is a very trippy movie and is sometimes compared to a looney LSD experience. Personally, I always imagined that the Mad Hatter and the March Hare put something extra in that tea....but I digress
On the earlier VHS editions on "The Little Mermaid", one of the tower's of King Triton's underwater castle is shaped like a penis. It is said that a Disney animator was quite irate after he discovered that he was being fired after work was finished on "Mermaid". For some payback, he decided that he would add his own contribution to the box cover, and the legend was born. While the tower does look like a phallic symbol on those early covers, it was never proven as to what really happened. In order not to offend anyone, Disney pulled those old copies off the shelf, and replaced them with new box art.
In "The Lion King", there is a scene where a flock of birds take off into the sky. If you pause at just the right moment, the birds spell out the word "sex". It's not obvious at all, and you have to REALLY look at it over and over again to see it.
There are a couple of others I know of, but I'll shut up now. I hope this answers your question.

the mad hatter is mad/crazy because hatters used mercury. mercury is poisonous and it affects your mind (apparently). the author of the novel that alice in wonderland is based on smoked opiates, which is obviously a narcotic. those things are based on reality, not symbolism, though.
i don't know anything about ariel's castle. but, the symbolism that adults see in disney movies is common. snow white and the poisoned apple - christian undertones, referring to eve and the apple in the garden of eden, for example. it's the same as reading literature and interpreting symbols in it. whether or not the artist or author intended that particular interpretation is another matter altogether.

I had a family member who worked at Euro Disney in Paris. He said that they always add a subliminal message into the films most of them sexual.

umm yea the columns of ariels castels are penis' and in aladden when he is on the balcony in jasmines room if when hes talking to the tiger listen very very closely and when he goes good kitty and right after that he says good teenagers take off their clothes... i heard it with my own ears..
