My mom's wedding was kind of big (She got married 2 years ago for the 1st time)...but just to give you an idea of the menu...
As an appatizer we started out with
1. Salad
2. Soup (broth based, it was some kind of vegetable soup..my moms a vegetarian)
and
3. A small serving of pasta
My opinion? Maybe just go with the salad. (and include a side of pasta with the meal perhaps...or not)
As the main course the guests had a choice of chicken, or beef. (Both came with mashed potato & vegetable)...the guests simply picked weather or not they wanted chicken or beef (on the invitation it listed the specific kind/type of chicken/beef) and my mom picked out the potato, vegetable, the pasta, the soup, and the salad as well.
Dessert was small...
Each table had a pastery platter on it..and then of course the cake - and coffee if the guests wanted it.
In the beginning of the wedding before the appitizer, there were little pickey foods set out...a platter of cheese and crackers, along with veggies and dip.
So perhaps for a smaller wedding you could do
Pickey foods (cheese and crackers, veggies and dip)
Appitizer salad
Main course Chicken/beef, potato, vegetable
Dessert Cookie platters on each table and a slice of
cake
Good luck :)

You did not give the time of day . . you did not give the setting, indoors or outdoors . . you did not give the formality of the wedding. . and you did not give the season.
If you are getting married in the morning you can't go wrong with a brunch. Breakfast or brunch is always less expensive than lunch or dinner, and you do not have to serve liquor except for the champagne toast to the Bride and Groom.
Lite fare receptions (appetizers, cake, and champagne) only work at certain hours of the day . . after lunch and after dinner.
A sit down dinner is always a better choice over a buffet. Why? A buffet is based on quantity, a sit dinner dinner is based on quality.
You can't go wrong with turkey, ham or chicken or a combination of these.
One of the best dinners that I ever had was . .
Italian wedding soup . . roast chicken . . mashed pototoes with mushrooms . . cranberry glazed carrots . . homemade applesauce . . and an ice ceam and cookie buffet. Everyone loved making their own ice cream sundaes.

You want food that's going to be universally liked. Chicken is a good bet, and a good caterer can do just about anything with it. The important thing here is to find a caterer that you like.
My sister is having a brunch reception, complete with a carving station of ham (I think), grits with shrimp (we're Southern), breakfast casserole, and other brunch type food. So let the time of day of your reception help on that as well. If it's an afternoon reception, you can get away with lighter fare than a dinner reception.

We did a "posh BBQ"
Starters were:
Smoked salmon and freshly baked bread
Cheese, ham and pesto bread
Cheese and tomato bread
Then we served the following:
Spicy lamb koftas with pitta bread and minty yogurt sauce
Lemon and herb marinaded chicken
various sausages from the local farmers market (lamb and mint, guinea fowl and orange, pork and leek, pork and apple, Aberdeen Angus beef, venison)
Jacket potatoes
Tomato, basil and mozzarella salad
Home made coleslaw
Garden Salad
Desserts were
Strawberries and cream
Tropical fruit platters
Cup cakes (which were our wedding cake)

A nice buffet might include roast beef, with turkey or baked ham as a second meat; variety of salads; a hot potato dish, such as baby roasted potatoes; hot mixed vegetables; cheese, pickles, buns; variety of dainties.

My wedding we did pizza and salads...
everyone LOVED it of couse my wedding was on a farm and it was outdoors so it fit. and my pizza was from pizzacatto, its a bit more fancy than dominos.
the downside is that they are not all over the place... best part is it was dang cheap!
