A 180 thermostat starts opening at 180 degrees and is fully opened at around 210 Degrees.

A 195 starts opening at 195 degrees and is fully opened at around 220 degrees.

In the winter time you are better off using th 195. You will get better heat. In the summer time it is better to use at 180 because you car will be less likely to overheat.

Which ever was initially installed in the vehicle in the factory would be the best choice, if you can get that information. However either will work.
