The whole Nirvana Unlugged In New York album is amazing. (I think unplugged means acoustic...I'm gonna look dumb if it doesn't, haha) I would actually go so far as to say that it's one of the best albums ever made.

Most Prince songs are a million times better live. I remember nearly crying when I heard him sing Purple Rain.
Incubus' "Pardon Me" is the best transfer from electric to acoustic since Layla as far as I'm concerned.

When I saw Bright Eyes last month, Conor and Nate just played "Lua", w/ acoustic guitar and trumpet. It was the most beautiful sounds I have ever heard.

The Scientist by Coldplay, one version I heard, was quite good. I don't know if I liked it better than the piano rendition. Probably not, but it was fabulous.
Layla by Clapton is also much better, I thought.. and Foo Fighters Everlong is also pretty good.
