I'd like to make red beans and rice for dinner tonight. Any idea what's in it?

    INGREDIENTS

    1 cup uncooked long-grain white rice

    2 cups water

    2 tablespoons butter

    1 onion, chopped

    1/2 green bell pepper, chopped

    16 ounces smoked sausage, thinly sliced

    1 (15 ounce) can kidney beans, drained

    1 (14.5 ounce) can diced tomatoes, undrained

    Bring the rice and water to boil in a pot. Cover, reduce heat to low, and simmer 20 minutes.

    Melt butter in a skillet over medium heat. Stir in onion and green bell pepper, and cook until tender. Stir in sausage, and cook until evenly browned. Mix in beans and tomatoes, and continue cooking until heated through. Serve skillet mixture over the rice.

    INGREDIENTS

    1 pound dry kidney beans

    1/4 cup olive oil

    1 large onion, chopped

    1 green bell pepper, chopped

    2 tablespoons minced garlic

    2 stalks celery, chopped

    6 cups water

    2 bay leaves

    1/2 teaspoon cayenne pepper

    1 teaspoon dried thyme

    1/4 teaspoon dried sage

    1 tablespoon dried parsley

    1 teaspoon Cajun seasoning

    1 pound andouille sausage, sliced

    4 cups water

    2 cups long grain white rice

    DIRECTIONS

    Rinse beans, and then soak in a large pot of water overnight.

    In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.

    Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.

    Stir sausage into beans, and continue to simmer for 30 minutes.

    Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

    Easy Red Beans and Rice

    Serves: 4 -6 servs

    1 lb Smoked link sausage, cut

    -1/2" slices (kielbasa)

    1 md Onion, chpd

    1 Green pepper, chpd

    1 cl Garlic, miced

    30 oz Kidney beans, drained

    16 oz Cn tomatoes, chpd, w/juice

    1/2 ts Dried whole oregano

    1/2 ts Pepper

    Hot cooked rice

    Instructions:

    Cook sausage over low heat 5-8 mins. Add onion, green pepper, and garlic;

    saute until tender. Drain if necessary. Add beans, tomatoes, and

    seasonings; simmer, uncovered, 20 mins. Serve over rice.

    I'm going to go out on a limb here and say, maybe red beans, and some rice? Personally, when I make red beans & rice, I buy the Rice-a-Roni version, and then do my thing with it - i.e., onion, bell pepper - sauteed; smoked sausage, and extra beans.

    1 pound dried red beans, rinsed and sorted over

    3 tablespoons bacon grease

    1/4 cup chopped ham

    1 1/2 cups chopped yellow onions

    3/4 cup chopped celery

    3/4 cup chopped green bell peppers

    1/2 teaspoon salt

    1/2 teaspoon freshly ground black pepper

    Pinch cayenne

    3 bay leaves

    2 tablespoons chopped fresh parsley

    2 teaspoons fresh thyme

    1/2 pound smoked sausage, split in half lengthwise and cut into 1-inch pieces

    1 pound smoked ham hocks

    3 tablespoons chopped garlic

    10 cups chicken stock, or water

    4 cups cooked white rice

    1/4 cup chopped green onions, garnish

    Place the beans in a large bowl or pot and cover with water by 2 inches. Let soak for 8 hours or overnight. Drain and set aside.

    In a large pot, heat the bacon grease over medium-high heat. Add the tasso and cook, stirring, for 1 minute. Add the onions, celery and bell peppers to the grease in the pot. Season with the salt, pepper, and cayenne, and cook, stirring, until the vegetables are soft, about 4 minutes. Add the bay leaves, parsley, thyme, sausage, and ham hocks, and cook, stirring, to brown the sausage and ham hocks, about 4 minutes. Add the garlic and cook for 1 minute. Add the beans and stock or water, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, stirring occasionally, until the beans are tender and starting to thicken, about 2 hours. (Should the beans become too thick and dry, add more water, about 1/4 cup at a time.)

    Remove from the heat and with the back of a heavy spoon, mash about 1/4 of the beans against the side of the pot. Continue to cook until the beans are tender and creamy, 15 to 20 minutes. Remove from the heat and remove the bay leaves.

    Serve over rice and garnish with green onions.

    If using dried beans you need to soak them until soft. Add chopped onion and garlic and about a TBL of oil to a pan and stir till soft. Put in the beans and cook until tender. Some people add meat like a ham hock for flavor, but it isn't necessary. Salt and pepper to taste or add a good hot sauce to taste. Spoon over rice. Personally I like brown rice.

    Red Bean, Rice, and cajun seasoning (some people used bell pepper as well) , and andouille sausage (spicy cajun sausage). Most of the juice from the red beans (if canned) will help thicken and keep it from being dry.

    How approximately combining the rice and beans. it rather is somewhat basic in spanish cooking. Saute a million chopped onion, with a million green bell pepper for 8-10 minutes. upload 2 cloves of chopped garlic and proceed cooking for 2 extra minutes. upload a million cup of uncooked rice, and stir so the rice would not burn, for yet another 2-3 minutes. upload a million can of stewed chopped tomatoes, or a million cup of salsa. Then a million cup of hen broth and the black beans or kidney beans (drained). Season with a splash of cumin, a million tsp pepper, 2 tsp chili powder. - cover with lid, and decrease warmth, and simmer for 18 minutes. it rather is super to serve with the pork tenderloin. Serve with lemon wedges and sparkling cilantro. you are able to upload peas to the rice, somewhat of beans, and get sort of a paella sort recipe... only upload a pinch of saffron, or a million tbsp of turmeric to the dish.

    If you want quick & easy, you could just pick up some Zatarain's Red Beans & Rice w/ all the ingredients already in. Some of the Zatarain's is already cooked so you just heat & eat--much better if you're just cooking for one person.

    One of my favs. I cook mine in the crock pot. Put in soaked beans, drained, chopped onions, can of Ro-Tel, and a good beef sausage, such as Chapple Hill. Make rice and cornbread on the side.
