in both there is 16 fl.oz in a pint 2 pints in a quart & 8 pints to a gallon

Because the US Gallon is smaller than the Imperial Gallon. US pints and quarts are smaller than their Imperial measures of the same name, as well.
Yes, the US gallon is 8 pints, but the pints are smaller as well.
Sorry can't comment on fl.oz. I never understood how floz and oz could be different and why liquid was measured by weight rather than volume.
Finally, watch out when you see these old measures, because in the US they DO NOT STATE the measurements are US Gallons or US Pints, as they assume that everyone knows it.
I saw a friend caught out badly by this when he ordered a supply of Kodak photographic chemicals for a middle eastern country. The chemicals were delivered to his laboratory and they were labelled as PINT and GALLON. He assumed IMPERIAL gallon, and made them up to the quantity. The photographic processing was screwed up, and when he looked for the reason, found that rather than placing the order with Kodak (who naturally provide metric quantities for international delivery), the supplier had decided to order them off the shelf from his friend in the US. Consequently, US measured chemicals were delivered with no indication that US units were being used!

There is a difference in the UK gallon, and the US gallon, but I dont know by how much

Because Americans are, IMHO, insular, if not actually xenophobic, f*ckw*ts.
At least this all backfired on them beautifully with that failed Mars probe.
