Somewhere between crab and lobster. It taste like your average sea food.

Crayfish is also called craw fish& are related to the spiny lobster.
In New Orleans they are usually served Cajun style (very spicy). I was told they use lots of spices because they really don't have much taste but are inexpensive.

i think you're asking about craw fish... they're a cousin to the shrimp, but don't bite into their head/body - just pop the tail, eat the meat from the body. My mom likes to suck their heads, but I think that's gnarly.

crayfish are baby lobsters so if you ever had lobster that is what they taste like
