Share your best ground turkey recipes?

Please....no meatloaf, burgers, or chili.......I'd prefer soup and casserole recipes that have strong enough flavors that work well with ground turkey. I already have tried replacing ground beef with ground turkey in several favorite recipes, but some come out too bland. Also, I am using ground turkey to promote a leaner, lower fat diet......please do not share recipes that are loaded with high fat ingredients. Thanks!

Please, I really want recipes that you have tried/tasted with ground turkey, not suggestions to replace ground beef with turkey in other recipes!

    I adore this lasagna! It's a little time consuming, but it definitely pays off! Makes a lot, but tastes wonderful reheated also!

    Lasagna Lite

    9 whole wheat lasagna noodles

    1/2 cup onions, chopped

    3 garlic cloves, minced

    1 lb ground turkey

    1 cup mushrooms, thinly sliced

    1 green pepper, deseeded and diced

    1 large tomato, diced

    3 cups tomato sauce

    2 teaspoons oregano

    1 teaspoon basil

    1 teaspoon dried parsley

    1/2 teaspoon fresh ground black pepper

    6 cups fresh spinach, chopped

    2 cups fat-free ricotta cheese

    3 teaspoons dried chives

    8 ounces part-skim mozzarella cheese, grated

    Directions

    Preheat oven to 350°F. Spray a large nonstick frying pan with vegetable cooking spray. Cook onion and garlic for several minutes stirring constantly. Add turkey and cook (crumbling the meat fine) until barely done about 4 minutes. Add the mushrooms and cook for another 2-3 minutes. Add the green pepper, tomato, tomato sauce, oregano, basil, parsley and pepper and simmer 2-3 minutes. Remove frying pan from heat. While the sauce is cooking, cook noodles in a large pot of boiling water that has been sprayed with vegetable cooking spray until al dente. Drain noodles and rinse with cold water and drain. In a bowl, combine ricotta and chives, mix in spinach. Spray a 9x13-inch baking pan with vegetable cooking spray. Arrange 3 lasagna noodles on the bottom of the pan. Spread evenly with one third of the ricotta mixture, then one third of the turkey mixture, and sprinkle with one third of mozzarella. Repeat twice with remaining ingredients. Bake for about 25 minutes or until cheese bubbles. Cool at least 5 minutes before cutting.

    This isn't the exact repipe my mom uses but I LOVE IT!!! She makes her meatballs with rice, but I couldn't find a recipe that does that.

    Ingredients

    2 lbs ground turkey

    1 1/3 cups matzo meal

    2 eggs

    2 cloves garlic , minced

    1 (16 ounce)box uncooked tri-color spiral pasta

    2 large carrots , peeled and sliced

    2 large tomatoes , chopped

    1 large onion , chopped

    4-6 cups tomato juice (depending on how strong you want the tomato flavor)

    6-8 cups water

    1 (10 ounce)package frozen spinach , thawed

    italian seasoning (about 1 T)

    black pepper

    margarine , for browning

    Directions

    1Mix turkey, matzo meal, and eggs well.

    2Shape into 1-inch meatballs.

    3Cook the meatballs either by browning them in a skillet or boiliing them in water Brown garlic in a saucepan.

    4Combine all ingredients except spinach in a large pot.

    5Heat to a boil, cover, reduce heat, and simmer for 15 minutes.

    6Add spinach and cook about 5 more minutes until pasta is tender

    You could try substituting it for the beef in tacos/burritos/enchiladas?

    I would think spaghetti sauce has enough flavor that you could make turkey meatballs/spaghetti?

    using it for lasagna works well.

    i made meatballs out of it last week and cooked them in turkey gravy serving them with mashed potatoes. it was actually pretty tastey. it was my attempt to not try to camoflage it as beef, but to enjoy it as turkey.
