Well, that would depend on where I was and what I was good at, and what type of work I was physically or mentally capable of.
Landscaping, lawncare is a cash cow. A few trucks, trailers,a few commercial mowers, trimmers, etc...
Payday loans, unscrupulous, but a sure thing.
A nursing staffing agency. National shortage. If you're organized, and can market it well, nursing homes and hospitals will pay a ton of money for staff when they are short staffed.

Based on your question, I am assuming that you do not have extensive business experience.
The best path for someone without a strong background in a particular business is to purchase a franchise.
I would suggest that you go to a local "Franchise Fair" and look at all of the booths.
If something interests you, you can get additional information.
Beware, that owning your own small business means 70 hours plus work weeks.
And always check out any prospective franchise opportunity with the Better Business Bureau.

it wouldn't be a real money maker, probably, but I would start a horse training operation. I already have the land, barns, arenas, etc. All I need is to quit my job and work at it full time.

Be real tight with your funds. The best area for a business is in cleaning, repairs, and remolding.
