mine is parmesan which i like to nibble bit by bit, my children also like it.

Blue cheese, mainly for it's versatility. In a blue cheese sauce draped over chips, crumbled on a nice salad, a blue cheese dressing to dip buffalo wings in, and least we not forget the best food on this planet, Beef Tips!

12-year old cheddar from Wisconsin, specifically Hook's brand.
Unbelievable stuff. Very sharp, slice it thin and nibble about 1 oz at a time. Mix it with an apple or grapes. Can't take too much at once.
I never had really good cheese until I moved to Wisconsin. Now I can't imagine life without it.

Too many to choose a favorite.
White American, Parmesan, Feta, Mozzarella, Sharp Cheddar and the rest of the cheddars.
I like cheese that is sharp and dry.

That is a hard one! I guess I'd have to say Gouda, the texture is out of this world and the taste is just right, not too mild and not too strong.
But I could never pick just one cheese that would be all I had forever! There's too many I love.

Monterrey Pepper Jack,because it's texture is sublime with a wonderful hint of picante.

Manchego from Spain, a buttery ,medium flavored, cheese . Absolutely incredible. I use it in my homemade macaroni and cheese with chorizo. Una comida buena !!!!!!

CoJack! (colby/jack mix). It's just plain tasty! unless I am in the mood for something with more zing, then I like pepper jack :)

smoked gouda cheese... because it's tasty.
swiss cheese (when eaten with french bread)... because it's tasty.
muenster cheese... because it has an orangy rim and because it's tasty.
