Biology experiment: Water potential of a root vegetable?

Why is it better that I investigate the water potential of CELERY rather than POTATO, for example. Is it to do with a defence mechanism of potatoes, which prevents water loss, that will ruin my results?

    Celary simply transfers water more efficiently. You can see the result a lot better than with potatos. So if you place a part of a potato in colored water you will not see a color difference in it as you will with a potato.
