Leftovers anyone???
I have leftovers from BBQing last night...Grilled Pork Tenderloin & Grilled Chicken Breast. I would like one of you to come up with your own unique recipe to use up my leftovers. Here is a list of other foods that I have to work with.
celery
carrots
bell peppers
cucumber
tomato
mixed lettuces
onions & garlic
ginger root
barely
white & brown rice
whole wheat elbow macaroni
corn tortillas
wheat bread
couscous
canned garbanzo beans
canned beets
I have numerous salad dressings, marinades, dried herbs, & cheeses. I have everything you can imagine from asian, mexican,itailian, and indian herbs.

How about left-over stir fry. Cube up the meat; chop up the celery, carrots, bell peppers, onion & garlic, and some ginger; add in some korean bbq sauce (if you have it, if not any asian-type sauce will work here). Wok it all together, and serve over rice of your choice. Taaa-daaaa ;)

shred or cube pork or chicken. make brown rice. saute onion and finely diced carrots (usually at this point I brown pork or chicken but becaused it's already cooked, wait) in canola or olive oil with generous amounts of of cumen, chili powder, tumeric, black pepper, garlic powder.if you have canned tomato add a can or two crushed or diced, along with chopped fresh or canned chile's(if you have some). if you have don't have canned tomato, dice the fresh one and add. add rinsed and drained garbanzo beans (black or pinto work better) let simmer for 10 - 15 min add chicken or pork just long enough to warm and serve with rice in a bowl or in corn tortilla. top with cheese
