JEWS, is there a rule about drinking milk with meat?
Are there any rules in Judaism regarding milk or the mixing of milk with meat or having more than one kind of meat in a meal.

I believe it has something to do with not consuming the mother while also consuming her nutrients.
"Milk and meat cannot be cooked or eaten together. This includes eating dairy and meat within certain time periods. Depending on the family's custom, this is 6 hours or 3 hours before consuming dairy products after meat products. Some hold that it is permissible to wash out your mouth before consuming meat products after dairy products, except for hard cheese, which requires the same waiting period as is required to eat dairy after meat. One must have two entirely different sets of cooking pots and table dishes for milk and meat. Both birds and mammals are considered meat, while fish, insects, and eggs are considered to be neither dairy or meat. Fish can be eaten with meat or dairy, although some hold that one should not eat fish and meat off of the same dish. Some Jews of Sephardic backgrounds follow Maimonides' ruling, and do not mix fish with dairy products of any kind"

Dietary laws of observant Jews are quite strict.
You are correct, Milk and Meat (dairy and meat) products may NOT be mixed or consumed together.
Some will wait as long as six hours between eating meat and being able to have dairy. Some wait only one, two, or three hours.
There are MANY more dietary laws other than the milk/meat thing.
And you do not have to be a Jew to know about these laws. I like to think of myself as an understanding kind of guy with at least a little knowledge of many of the world's religions. Ignorance breeds hatred, so I like to be informed and tolorant of my fellow human beings regardless of my or their religion, nationality, race, or creed.

The old testament forbids boiling a calf in it's own mother's milk. It would be cruel to turn that which gave life to the bringer of death. This was extended to don't eat beef with milk....
Then, people decided to be 'more holy', that they would not eat any meat, Chicken included, with milk. Some people keep seperate sets of dishes and use one for milk, one for meat.

no if you follow scripture due to shemoth 23:19 is not talking about food for consumption it was talking about a pagan fertility rite to boil a kid in it's mothers milk , also abraham served all together in bereshith 18:8 ,curds milk and meat . rabbinical teaches to seperate but our father say different in his torah the question here is are you following scripture or man's torah

the three times this law appears are for the three prohibitions against cooking it, eating it, and getting benefit from it
and about your second question, different types of meat can be eaten together (though most won't eat fish and other meat together)

Yes, from the Old Testament. For those who keep kosher, meat and dairy products may not be mixed, stored, eaten, or presented at the table together.
Orthodox jews keep two fridges in their kitchens; one for meat, one for dairy.

Yes, it's not Kosher. Like, you can't have a cheeseburger, for example, if you're Kosher. Dairy and meat can't mix.
