Homemade Rice a Roni?
I don't want any recipes. I made a pretty good cheesey rice a roni like you get in the box tonight, but I had to use velveeta to get that yellow salty flavor the kids like with a mixture of organic cheddar. Does anyone have an idea of another type of cheese I can use that is healthier (less preservatives) than velveeta to get the same effect?

You can use cheddar, but it's best if you mix it into a bechamel sauce. Bechamel is a basic white sauce made with flour, butter, and cream (or at least whole milk.) Most cookbooks should have a recipe for a plain bechamel sauce. You then just add a pound of shredded cheddar to the sauce, and let it melt. Now you have a smooth (and not greasy) cheese sauce you can use for macaroni and cheese...or just use it on your rice.
You can also use other cheeses as well, like fresh grated parmesian.
