Here's one that I had never heard of before, but tried it and actually became one of my favorites:

    Sweet Potato Salad

    1 large can sweet potatoes

2 hard boiled eggs, diced (I like 5 eggs)

    1 dill pickle, diced

    1 small onion, diced

    2 celery stalks, diced

    1 cup mayonnaise

    1 tablespoons, spicy brown mustard

    1 teaspoon lemon juice

    salt and pepper to taste.

Drain sweet potatoes (discard any stringy pieces); mash into an even consistency. Add diced eggs, pickle, onion and celery and stir. Mix mayonnaise, mustard and lemon juice. Stir all ingredients together and refrigerate for 1 hour.

You can eat this like a salad, in a sandwich or in a wrap. Even try spreading it on a tortilla, roll it up, wrap it in plastic overnight, and then cut it into slices for appetizers.

    ARTICHOKE RICE SALAD

1 (6-7oz) pkg. chicken flavored rice mix (like Rice-a-Roni)

    2 green onions, thinly sliced

    1/2 green pepper, diced

    8 pimento-stuffed olives, sliced

2 (6 oz) jars marinated artichoke hearts (cut up)

    1/4 tsp. curry powder

    1/3 c. mayonnaise

Make rice according to package. Mix (while warm) with everything else until well mixed up. Serve hot, cold or room temp...

GREAT for buffets, since it can be served room temp.... I've been making this almost 30 years, and everyone loves it

A salad I really love is super simple. I take spring mix greens and lightly toss them in some poppyseed dressing. I then put sliced or cubed green and red apple, walnuts, pecans, slivered almonds, and edemame beans on top. Its fantastic and something different than your everyday vegetable salad.
