Actually, I have seen with my own eyes 21 books, each one explaining what is philosophy. So, as I know, philosophy is VERY hard to define, especially as it takes many forms (Religions philosophy, Language philosophy etc.), which at their turn are also not easy to define. As you already guessed, an answer cannot be given here, or else it would be incomplete.
But, as ancient Greeks used to call it, philosophy is that which studies those above the sky and beneath the depths of earth(don't know if my translation is accurate, but you get the point). Also, as I have discovered, it does one not much good asking what philosophy is. Its better to just go with the flow.
If you watch the sun directly, you can actually go blind, but if you just look around, you will discover the sun in any object you see.(For it is trough the sun's light you see the object)

For me, a philosophy major, it is the love of knowledge. And, what it is that we know and how we know that it is true.
I graduated with a philosopy BA in '75. Over the years it has helped me many times making me look for the underlying truths when making busness decisions.
Studying philosophy helps you learn how to think.
