I would suggest the Watermark Hotel and Spa. It's a smaller, upscale, romantic hotel located directly on the Riverwalk. It's not a cookie cutter, run of the mill property. Here's their website:

    The Drury Inn

The Hyatt is better than the Drury Inn, but both are nice enough.

The Hilton Palacio Del Rio right on the river walk is my favorite. If you get a river view on an upper floor, you can watch the show at the ampitheater from your balcony, awesome and romantic, with some candles and a good bottle of wine or other tasty beverage.

Check out the list of hotels and resorts at this webpage:

the links are commission free, so you go to the hotel websites without the usual hotels.com garbage. The Marriott is nice, and on the riverwalk.

    Enjoy your stay.
