What is a good chicken pasta recipe?
My boyfriend is always cooking for me because I am not really big into cooking but for our 1 year anniversary I want to cook for him a pasta with some chicken in it. Does anyone have any good recipes for one? Oh, he does not like tomato sauces either so that makes it a little more complicated! Thanks.

Chicken Fettuccini Alfredo
INGREDIENTS
* 6 skinless, boneless chicken breast halves - cut into cubes
* 6 tablespoons butter, divided
* 4 cloves garlic, minced, divided
* 1 tablespoon Italian seasoning
* 1 pound fettuccini pasta
* 1 onion, diced
* 1 (8 ounce) package sliced mushrooms
* 1/3 cup all-purpose flour
* 1 tablespoon salt
* 3/4 teaspoon ground white pepper
* 3 cups milk
* 1 cup half-and-half
* 3/4 cup grated Parmesan cheese
* 8 ounces shredded Colby-Monterey Jack cheese
* 3 roma (plum) tomatoes, diced
* 1/2 cup sour cream
DIRECTIONS
1. In a large skillet over medium heat combine chicken, 2 tablespoons butter, garlic and Italian seasoning. Cook until chicken is no longer pink inside. Remove from skillet and set aside.
2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
3. Meanwhile, melt 4 tablespoons butter in the skillet. Saute onion, 2 tablespoons garlic and mushrooms until onions are transparent. Stir in flour, salt and pepper; cook 2 minutes. Slowly add milk and half-and-half, stirring until smooth and creamy. Stir in Parmesan and Colby-Monterey Jack cheeses; stir until cheese is melted. Stir in chicken mixture, tomatoes and sour cream. Serve over cooked fettuccini.

SPIRAL CHICKEN PASTA
2 chicken breasts (cooked and cut into cubes)
1/2 teaspoon Portuguese spice
1/2 teaspoon Cajun spice
2 tablespoons soy sauce
1 medium size onion
1 clove garlic (fresh)
2 cups spiral pasta (cooked as directed)
half (each) green, red and yellow pepper
1/2 cup of mixed vegetables
2 tablespoons olive oil
Warm oil and add onions and fry until soft. Add spices and chicken. Sauté for 7 minutes or until chicken is done. Add all vegetables and continue to cook for 10 more minutes.
Cook pasta according to package directions. Combine the chicken with the pasta and bake for 7-10 minutes in oven temp 325°F.
Serve with green salad and garlic bread.

Take some boneless chicken breasts and put them in a baking dish. Add spices if ya like that. Add some water to the bottom and put in some pasta. Cover the dish with aluminum foil.
Cook it at 350 for about 35 to 45 minutes. Take it out and add some shredded cheese on top and leave it covered until it melts.
Tasty and easy.

************Creamy Chicken Pasta:
INGREDIENTS
8 ounces wide egg noodles - or any pasta your boyfriend likes
1/2 cup frozen green peas
3 chicken breast halves
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup heavy cream
1 cup mozzarella cheese
1/2 + cup cooked chopped bacon
DIRECTIONS
In a medium pot cook egg noodles in boiling salted water. When pasta is 3 minutes away from being cooked, add in frozen peas or broccoli. Cook until vegetables and noodles are tender. Drain well.
Meanwhile, boil the chicken in a medium saucepan until cooked completely. Drain chicken and cut into bit size pieces.
In a large saucepan mix cream of mushroom soup and cream until warm and lumps are dissolved.
To the large saucepan add the cooked and chopped chicken, noodles and vegetables. Blend ingredients with the cream and soup mixture. Stir in grated mozzarella cheese until melted.
Serve warm.

wow these people that answered never made chicken...
Just cut up some chicken breasts,onions, and minced garlic cook them in olive oil with garlic powder, onion powder, salt and pepper...drain....add some cooked noodles with alfredo jared sauce, add about a cup of parm, mix all thru and make a great dish, finish with fresh parsley...
serve with salad and garlic bread

Serve linguine or angel hair with this dish. Serve the chicken and sauce over the pasta on a large platter. YUMMY!
CHICKEN PICCATA
2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
2 cups all purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped
Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
In a large 10 or 12-inch skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.
Reduce heat to medium low and add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

Chicken Boudine
2 cups cooked egg noodles
2 (10 3/4-oz) cans cream of mushroom soup
1/2 cup chicken broth
1/4 cup dry sherry
4 cups chopped cooked chicken
3 cups grated sharp cheese, your choice, divided
1 (2¼ oz) package slivered almonds, toasted
¼ cup drained, chopped pimentos
1 (4 oz) can sliced mushrooms, drained
Salt and pepper
Green onions, optional
Preheat oven to 350º F. In a large bowl, toss together the noodles, soup, broth, and sherry. Add the chicken, 2 cups of the cheese, the almonds, pimento, mushrooms, and salt and pepper, to taste, and toss gently to combine. Transfer the mixture to a greased 13 by 9 by 2-inch casserole and top with the remaining cup of cheese. Bake for 30 minutes, or until bubbly. Garnish w/ chopped green onions.

4. In a rush? Smithfield, Hormel, Armour, Tyson have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Use this for your meat dish with a side dish or two of vegetables, rice, or potatoes. You will find these packages near the meat section, they are not frozen. Ask a clerk for help.
5. Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy in jars, a canned vegetable, canned cranberry sauce, and frozen Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.
6. Another thing you can do is cook in a slow cooker or a crock-pot. You put the meat into the crock-pot in the morning and it cooks all day long. The meal is ready at dinner time. Crock-pots can be bought at your grocery store, WalMart, Target, etc. BE SURE to read the booklet that comes with the crock-pot.

7. If you are in a hurry, go to your grocery store and pick up a roasted chicken that you can buy in the deli section. They also have side dishes such as veggies, salads, desserts, and etc.
8. Frozen dinners are always a good choice. Our favorites are Stouffer's, Marie Calendar's, Michael Angelo's, Boston Market's. Just add a side dish, salad, or fruit salad. Desserts can be bought in the bakery section of your grocery store.

8 MINUTE STRAWBERRY CHEESECAKE
1 Keebler graham cracker crust
1 (8 oz.) tub Cool Whip
1 (8 oz.) bar of cream cheese
1/2 c. sugar
1 tsp. vanilla
1 pt. fresh strawberries
First cream the softened cream cheese, gradually add in sugar. Add vanilla and whip until fluffy. Fold in Cool Whip. Pour into crust. Garnish with fresh strawberries, blueberries, cherries. Refrigerate for 1 hour, until firm.

1 c. crunchy peanut butter
2 c. powdered sugar
1 c. milk
