When I test my laptop's headphone jack, it works, but...?
when I'm doing something and plug in headphones, the speakers keep playing. How can I fix this? I have Windows Vista Home Premium.

Go to your control panel, depending what you have some sound cards have their own applet in the control panel, along with the standard windows applet, (or icon)
Find the one for your sound card and poke around for the setting to mute the speakers when headphones are plugged in
They do it electronically now, the switch contacts in those little headphone jacks caused grief when they were used a lot, when you unplugged the headphones the speakers didn't always come back on
