With ketchup, but only for about half the fries. If they're nice, fat, and crispy, they should hold up on their own. Sometimes cheese is good, but again, not too much. Gravy and bacon are just overkill. I have no idea what poutine is.

Fresh cut, fried in olive oil, sprinkled w/ cheese, salt, pepper and a squeeze of lemon!
A bit on the crispy side always.

ketchup
cheese w/ or w/out bacon
I like mine soft and mushy, slightly crisp, never crunchy
I do like fried hashbrowns from waffle house...scattered and double covered with ketchup...and hardees has good bacon cheddar fries....otherwise home fried from the potatoes I sliced

Well-salted, not too crunchy, with several little paper cups of ketchup for dipping two at a time. :)
