Does anyone know a good sugar free muffin receipe?
Hubby is diabetic & i'm looking into healthier forms of food that he's used to.. thanks

Just replace the sugar in your favorite recipe with Splenda. That's what I do. I also replace the fat with canned pumpkin and or applesauce to reduce the fat in the muffin. And if you use a whole wheat flour like the King Arthur(think that is what it is called) Flour then you add more fiber and also lower the impact on his blood sugar. It did take a while for my family to get used to this but now they love it. White flour, and products made from it, raise blood sugar just as bad or worse than table sugar because the digestion has already began at the manufacturers plant. They take a healthy grain of wheat and remove the bran and all the other good parts and just leave you with the endosperm, or what I call fluff. The sugars in the white flour are readily absourbed by your body because it doesn't have to work to digest it and get to the sugar causing a rapid increase in blood sugar followed by a sharp decrease a short time later. If you would like some more ideas for healthier cooking, I recommend taking a look at The South Beach Diet. It focuses on real food, healthy carbs, lean proteins, lowfat dairy and healthy fats. It was developed by a cardiologist initially to improve the health and blood chemistry of his patients but the side effects were stablizied blood sugar and weight loss. And you get to eat lots of good food. Also, another favorite site of mine for more healthful eating ideas is Hungry-Girl.com She has tons of great ideas on how to swap healthy substitutes for bad ones. She even has a healthy french fry swap made from butternut squash. At first I thought it would be awful tasting but it really worked. Fooled my 6 year old french fry lover. I just told him it was a new kind of potato and he loves them. Just keep in mind that white sugar, brown sugar, white flour and trans-fats(any fat that has been hydrogenated) are bad for your husbands health as well as yours. I realize that cakes, donughts, cookies and crackers made from processed white flour are much more appealing but once you get started eating whole grain foods you kind of lose the taste for white flour products. And the South Beach Diet does work to stabilize blood sugar and clean up bloodwork. I put my husband on it with me because his triglycerides were over 400 and his fasting blood sugar indicated that he was getting close to becoming diabetic. After one month on the program his triglycerides went down to 125 and his fasting blood sugar was well within normal ranges. Hope this helps.

Instead of looking for sugar free, I would go to Trader Joe's or Wild Oats and pick up some Stevia. It is highly recommended by doctors for those with diabetes and you just sub it for sugar in normal recipes. I believe it's 1/2 tsp to every tablespoon - or something like that (I don't know for sure, it says on the box). I have always found it was easier and more flavorful to do substitutions on recipes you already love, then trying to find others. Which is not to say there aren't good sugar free recipes out there. =)

Oatmeal Muffins
2 tbsp. butter
1 cup hot milk
3/4 cup oatmeal uncooked
4 tbsp. honey
1/2 tsp. cinnamon
1 egg beaten
1 1/2 cups flour
1/2 tsp. salt
3 tsp. baking powder
Combine hot milk and butter in bowl. Pour mixture over oatmeal
and wait a few minutes. Stir in honey, cinnamon and egg. Sift
together dry ingredients and add to butter mixture. Do not over
mix dough. Bake at 400 degree oven in muffin pan for 20-25
minutes. Makes 12-15 muffins.

Blueberry Oat Muffins
Ingredients
1 cup Quaker Oats (quick or old fashioned, uncooked)
1 cup low-fat buttermilk
1/4 cup egg substitute or 2 egg whites, lightly beaten
2 tablespoons margarine, melted
1/2 teaspoon grated lemon peel
1 cup all-purpose flour
3 tablespoons granulated sugar or fructose or heat-stable sugar substitute equal to 3 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt (optional)
1 cup fresh or frozen blueberries (do not thaw)
Directions:
Heat oven to 400�F. Lightly spray twelve medium muffin cups with cooking spray.
In medium bowl, combine oats and buttermilk; mix well. Let stand 10 minutes. Stir in egg substitute, margarine and lemon peel until blended.
In large bowl, combine flour, sugar or sweetener, baking powder, baking soda and salt; mix well. Add oat mixture all at once; stir just until dry ingredients are moistened. (Do not overmix.) Gently stir in berries. Fill muffin cups almost full.
Bake 20 to 25 minutes or until golden brown. Cool muffins in pan on wire rack 5 minutes; remove from pan. Serve warm.

My hubby is also diabetic, and I've been catering desserts (and doing platters) for over 30 yrs:) ... Splenda is an excellent substitute for any sugar (get the one that subs 1-to-1) in a recipe. It works beautifully in cheesecake; and I just use storebought sugar-free cookies for the crust. I've subbed Splenda for sugar in brownies (using unsweetened cocoa powder recipes), scones and cookies...... There are alot of flavors of sugar-free jello & pudding cups now too; sugar-free popsicles are a great quick snack; Super Walmart has a great selection of sugar-free pies, cookies and Angel Food cake. In fact, I bought an Angel Food Cake for him today, with sugar-free Cool WHip and fresh strawberries.......

SUGAR FREE MUFFINS
1/2 c. vegetable shortening
2 env. Sweet-N-Low
2 eggs
1 1/2 c. flour
1 1/2 tsp. baking powder
1 c. raisins
Orange juice
(In small saucepan, place raisins in just enough orange juice to cover. Simmer over low flame until raisins are softened. Remove from heat and cool).
In medium sized bowl, cream shortening with Sweet-N-Low. Beat in eggs singly. Mix flour with baking powder and add to creamed batter, mixing until smooth.
Add raisin juice mixture and combine until smooth and creamy. Fill cupcake liners in pan evenly to fill 12 cupcakes. Bake at 350 degrees for 30-35 minutes (or until light golden).

take your favorite or any muffin recipe and just use splenda in place of sugar.
Also add a tablespoon or two of honey to the batter because splenda tends to dry baked good a little bit

i just made carrot cake with carrot oil stevia (a sugar replacer ) peanuts gluten free flour and baking powder it turned out alright just go online for a sugar free vegan cake recpie and replace the flour to gluten free one (you have caeliacs disease right?) i dont but no how to go gluten free haha :)
