if you are cooking a whole chicken I usually buy one with all the bits out it....

put it on a baking tray and heat my oven to a medium heat.

I pour olive oil, chopped garlic and rosemary around the chicken (you can add any flavours you want really) and then put my veg around it... I then cover it with foil and put in the oven for about 30 mins... I then check it by making sure the juices are clear and cut a little to see if its white or pink..

if it is pink IT IS NOT COOKED!.... i then take of the foil put it back in for 5-10 to brown everything and crisp up the chicken skin!

I usually bake or saute a chicken breast, I never cook legs or whole chickens (I'm not that confident in my skills at cooking lol) - but baking it, depending on the amount of weight / mass in the breast, as well as the sauces with it, I usually cook it for about 1/2 hour to an hour (shorter if you have precooked it for something, like chicken parmesan).

if it's a whole chicken and you have a crockpot-use it!! it's the easiest way to cook it.

just cover the bottom of the crockpot w/water (only enough to cover the entire bottom-about 1/4 cup).

season the chicken w/basil,oregano,rosemary,garlic powder, salt and pepper to taste.

put lid on crockpot and cook on high 4-5 hours or on low 8-9 hours.

your chicken will come out tender and juicy!!

think up some side dishes and enjoy!!!

i use chicken breasts, usually a spicy season all, then wrapped in foil and cooked for about 20-30 mins depending on size in the oven. another seasoning i like is just to grind black pepper over them.

I like to grill boneless chicken breasts. I pound the chicken to get it into an almost thin strip and then season it with s+p (salt and pepper) and with chopped garlic, red pepper, and any other veggies I have on hand.

    Hope this helps!

i made chicken the other day. i used chicken breast strips and since there wasn't enough time to merinade them, i just put some bbq sauce on them and cooked them outside in the grill, flipping them over every so often.

if you have a whole chicken then cook it whole. Crockpot or any earthenware or sealed container keeps it moist. Slow cooking keeps it tender. Leftover carcass can be simmered to provide fantastic stock for a soup so nothing wasted
