If it's not a spanish-language edition, the only reason it would be doing this is that the saved game settings are telling it to when it loads.
Try taking out the memory card, and restarting it, to make it start up in the default language. Or you could go into the menu settings, and with trial and error look for settings like "lingua," once you see the word "ingles" select it.

you cant change it, buy a mexican that can speak english and then have them translate?
