If you're taking Highway 1, it's absolutely beautiful, especially this time of year. It's somewhat curvy around Big Sur, but not terribly so. Stop and see the elephant seals at Piedras Blancas if you have time.
If you just want to get there fast, take 101. The only remotely curvy part is between Salinas and Monterey. Should take around 2.5 hours.

about 2-3 hrs (doesnt matter which one you take) You can take the curvy way (highway 1) That highway can get curvy and very windy, but the views are very nice. You can also go take highway 101 which is way less curvy, but there are no amazing views. Both are equally as long (about...)

Remember, if you are the drive on highway 1, you will be looking at the curvy road and not so much the scenery.

Yes, a couple of hours (about 140 miles)...
Are there certain things you hope to see, or not?
Are you looking for a quick route with the least amount of bumps, stops, etc. Or a scenic route, like Highway 1 ?
