oliver tractor running issue?

my dad just got a 1964 oliver 1600 tractor and it runs great at idle or on smooth roads but when you go in the field and are hitting gopher mounds,etc... it stalls and even when warm you need to choke it to start it back up. we rebuilt the carb. and have spent quite a bit of time trying to adjust it but nothing makes a difference. also it does still stall if you have the choke on a little too. any good ideas are greatly appreciated. and i will give 10 points for best answer

Update:

inside the gas tank looks real nice and clean.

Old tractor......Crap in the fuel tank? Hitting gopher holes stirs up the crap in there sending it to the carb maybe? try a new fuel filter or drain the gas tank and see what comes out and clean it. As far as having the choke on and stalling it would be getting to much fuel and fouling out the plugs.

Well then I would check the wiring, could be a bare wire somewhere and is touching metal in a rough field situation and shorting out or look for a loose connection. Other than that I am not sure but i'll keep checking on here and I will ask some of my bud's and see what they think...Well maybe I doubt it but maybe there is a safety switch in the seat? or a nuetral safety switch on the tranny?
