Simple...make a basic white buttercream, add green food coloring to make it look like healthy grass, then I would add a bit of red here and there, when it mixes in it should look more like dead or dying grass. At this point you have two choices, either spread it where you want it or pipe it. There is a tip made (I don't remember the number) that is basically flat on the end with 6-8 small holes in it. It will work well for you.

LOL I've been meaning to do one of those but the person on the receiving end has to really have a good sense of humour.
There are a couple of options for grass. Either do as the previous poster said, and colour coconut green (this is a time saver), or use the Wilton 233 or 234 tip (if you have Ateco or something else I'm not sure what number those are).
It's painstaking but I use those tips all the time for grass and it comes out looking fantastic.
Have fun

WHICH TIP? You could use the thinest round that you have, like small spagett, and make the grass look rather wicked (or IOW, weed like). :) LOL.
If you have time to experiment, even earlier of the same day you frost: How about coloring the white frosting w/coffee grounds!! I'd start by trying to dissolve some grounds in water and add to the frosting (keeping in mind the total liquid in the frosting -- when you hare making that portion of your frosting). Maybe using instant coffee?
Sounds like a fun project from your end!

When I have made grass before I have used coconut Take shredded coconut in a zip lock bag and add a drop or two of green food coloring. Close it up and shake and your coconut turns green. Works great.

I would go with a green died vanilla frosting, or a mint flavoured frosting, and then just pipe it on in little grass bits. Hope your part is fun.
