Anyone know the recipe for egg fried rice? Just like the Din Tai Fung 鼎泰丰 taste. The eggs covering the rice giving a nice aroma of eggs

First boil the rice, as it says on the packet.
Get a wok.
Heat groundnut oil, and then add finely chopped garlic, ginger, and chili. Stir fry that for a few seconds, then add a few whisked eggs, scremble them, stir fry that for a bit, then add your rice, stir fry all of that together, all nicely mixed, then add soy sauce, and your done.

Egg fried rice
Method
1. Cook the peas in a pan of boiling water for about 5 minutes if they are fresh; if they are frozen, simply thaw them and drain
2. Mix the eggs and sesame oil in a small bowl and set aside.
3. Heat a wok until it is very hot. Add the oil and when it is almost at smoking point, add the cooked rice and stir-fry for about 3 minutes.
4. Add the ham, peas, salt and pepper and fry for 5 minutes over a high heat.
5. Add the egg and stir-fry for another minute.
6. Tip in the spring onions and bean sprouts and cook for 2 minutes, or until the eggs have set. Turn the rice on to a plate and garnish with spring onions.
7. Serve hot, or at room temperature as a cold rice salad.

i don't know how they would cook it, but me, i just scramble eggs then stir fry it with leftover rice, and add some green onions (scallions). Sometimes i add some little pieces of ham or chicken and some light veggies like green peas or carrots.
when cooking fried rice, remember to oil the wok(or pan i guess), so the egg won't get hopelessly stuck on. And put the egg in first, and keep chopping it up with some utensil till it doesn't have liquid left anymore, then put in the rice, and then meat, and lastly the green onion and veggies.
btw you put the salt in the egg, when your scrambling it.
i though those people sell xiao long bao? you should go try those, i think it's their specialty.

I simply make an omelette or scrambled eggs, then add the rice, veggies and soysauce
