    Just mugged for Biology, so I think I can answer this question!

    Amylase is the enzyme that breaks down starch into maltose molecules, which are in turn broken down by maltase into glucose molecules, for easy absorption into the bloodstream.

    Amylase is found the saliva, known as salivary amylase. After it is deactivated by the low PH level of the hydrochloric acid in the stomach, more amylase comes in, and it is found in the small intestines. It is found in the intestinal juice as well as in the pancreatic juice.

    Amylase digests starch into two glucose units called maltose. It's produced by the mouth and more significantly by the pancreas.

    Starch contains straight chains of glucose called amylose linked by 1 to 4 bonds which are broken down by amylase a.

    It also contains glucose chains with branches called amylopectin. Amylopectin contains 1 to 6 bonds at the branching points which amylase a can't break down so this is done by amylase c another member of the family.

    Amylase requires both the calcium and chloride ions in order to be able to function at all.

    Amylase can only break down starches to obtain energy. However, humans do not have the necessary enzyme to break down cellulose. Cellulose is just one type of fiber - different types of plants have varying amounts and kinds of fiber, including pectin, gum, mucilage, cellulose, hemicellulose and lignin. So, cellulose cannot be broken down for energy.
