The ceramic headers will look good for a long time, but they also dissipate heat better than other headers.

stainless steel headers ussualy are more reliable then ceramic steel headers.
ALL determining on the quality of the steel.
the exhaust system is known to battle all the elements hitting it the last thing u want is your headers cracking and your car to loose power or even go lean.
stainless steel headers would be recommended to wrap and cote.
and ceramic are usually not.
if you do get ceramic headers prepare for a loud rattling
and some people say they have a smell to them when the car is on.
basically they are good for track use only
because it is built for high end RPMs
ceramic headers are not recommended for turboed aplications either.

ceramic would hold the heat better, may chip off, polished stainless looks great, even if it goes straw coloured if too hot. Of course, if it's on the inside, you want it as smooth as possible so it won't catch layers of carbon and choke up. I guess ceramic is a cheaper option, but I'd doubt as good if we're talking insides, & assuming a quality product.
