Do supermarket butchers mix old ground beef with new?
I have had this happen to me quite a few times- I buy a package of what appears to be nice, fresh ground beef but when I break it open at home, the middle is greyish-brown. I know all the theories about oxidation, but that theory would not explain the old, musty smell associated with the grey-brown meat. I think they might be covering the old meat with fresh in order to sell it. Anyone have any inside info?

I worked at a butcher shop and had the same question. The butchers work with so much meat in a day that it would be nearly impossible for them to single out "old" meat and mix it with new. The grey-brown you see is simply the color of the meat as it ages and has come in contact with air. Don't worry - even if it was old, it wouldn't hurt you if you cooked it properly. The majority of the meat we buy in this country is pumped full of chemicals to give it that "red" color that you see and associate with freshness. But, if you were to go to a high-dollar steakhouse and order a steak, you would see that is has been "aged" for ten days or even up to two weeks!

If you suspect a supermarket butcher of doing this ,report it to the state board of health and the department of agriculture as this practice is dangerous and completely ILLEGAL,that store can be closed and the butcher fined up to $50 000 per offense ,people have died from eating cross contaminated meat handled this way -if you think your burger is old covered by new -freeze it imediatley and contsact those folks I just mentioned ,then give them the sample you think is bad ,and they will deal with it

i don't put anything past people in these days. however, that just seems quite insane. i mean, where's the payoff? mix old meat with new and you have... old meat. instantly. the fresh stuff will rot at once
what they do with old meat is normally put a dry powder seasoning on it; call it terriyaki something. or, ...well i forget the name of the other popular one. i stay well away from such. they all do that one, safeway, kroger's piggly-wiggly.

They shouldn't try this, yet they do. answer: grind your guy or woman meat. i've got known a pair of butchers and that they actual consider me on that. you would be shocked the flaws that discover their way into that floor meat you purchase. once you grind your guy or woman, you administration what's put in there. this is nicely worth it. in case you recognize your butcher, in simple terms ask him.
