In iTunes go to File, Import Folder, select the folder with your music in it on your hard drive, and they should all import.

When Itunes is open, open the folder or folders you have the music in that you want and just highlight all the music in the folder and drag it onto Itunes and it will create a copy and paste it into Itunes by itself.
The music still stays in the folder and all is well. Just creates a copy!
Option 2:
In Itunes go to:
File
Add File or folder if you have a whole folder
If you select just the file you can select 1 or more by holding down the shift key and then select the group of songs you want.
OR if you have a single songs in that folder of music you want in Itunes you can select single songs, but multiple ones by holding down control key and just picking the ones you want!
Hope that helps!

File -> Add FOLDER to library
You are probably doing Add File to Library.
