I am grilling some MahiMahi tonight- any good ideas for marinades or toppings?

    1. Balsamic reduction: take some balsamic vinegar( 1 cup), put it in a non stick pot, if you can, let it simmer until thick. Brush it on your Mahi, enjoy.

    2. Simmer some ginger(1 T), scallions, (2 T), soy sauce( 1/2 cup), sugar(2 T), crushed red pepper flakes(pinch), minced garlic, ( 1 T). Simmer for a few minutes, let cool, add the Mahi, let marinate for 1 hour, grill or broil.

    3. Make a nice salsa: try chopping some pineapple, (1 cup), cilantro( 1T fresh, only), jalepeno pepper( 1 minced fine), lime juice( 1 fresh lime). combine in a small bowl. serve over mahi.

    4. Make a nice 'rub': garlic powder, crushed red pepper, paprika, salt and pepper, cumin, all about 1 Tablespoon. Rub with some olive oil all over the fish and grill or broil.

    Mahi Mahi tacos are great!

    2 tablespoons vegetable oil

    2 6-ounce fresh mahi mahi filets

    1/4 cup blackening spice

    ½ teaspoon vegetable oil

    6 6-inch flour tortillas

    ½ cup onion, chopped

    1 tablespoon fresh cilantro, chopped

    your favorite salsa

    Method:

    Put 2 tablespoons of oil into a heavy skillet over medium-high heat and cook until the oil is hot, but not smoking. Dredge the mahi mahi filets in blackening spice and cook for 3-4 minutes on each side, until bronzed on the outside. Set aside.

    To serve, place a portion of the mahi mahi in the center of each tortilla. Add onion, cilantro, and salsa to taste.

    I had it recently encrusted with macadamia nuts and another similar fish encrusted with wasabi. Both awesome!

    Top it off with a mango salsa. That is my favorite.

    garlic, salt and paprika.

    Personally, I just like butter and salt.
