Sides for grilled pork tenderloin???

I usually get stuck in the same rut of bakers & salad so tonight I want something different, yet still comfort food for sides to go with grilled pork tenderloin chops about 1 1/2 thick.....

I've got the makings for scalloped potatos, garlic mashed potatos or a pkg of premade stuffing from the meat case. I also have a mushroom pasta dish, carrots, peas, corn, broccoli, baked beans and home fries ( frozen)...

What will be something different, still yummy?

    Scalloped potatoes with garlic or pasta and a salad. Something about salad with grilled food just works.

    I don't each much pork anymore due to health reason, but I know that apples go great with pork. Waldorf Salad is sometimes considered as a winter dish, but it works all the time. Here is a Simple Recipe.

    * 3 Granny Smith apples, cored

    * 3 Red Delicious apples, cored

    * 2 cups mayonnaise

    * 1/4 cup white sugar

    * 3 Tbsp. lemon juice

    * 3 Tbsp. orange juice

    * 2 cups whipped cream

    * 6 stalks celery, finely diced

    * 1 cup golden raisins

    It is beautiful, and tastes great. Happy Cookin.

    Potatoe Bake

    Ingrediants:

    1/4 tbs Pepper

    1/4 tbs Garlic powder

    1/2 tbs Salt

    Potatoes

    Oil

    Directions: Mix dry ingrediants to create Paula Dean's "House Seasoning" (foodnetwork.com).

    Cut potatoes into chunks and put in a Ziplock bag. Coat Potatoes lightly in oil (I like Olive Oil because it has less fat). Sprinkle in house seasoning to taste (you want a light coat). Shake and bake at 350 for about 40 minutes. Yummy!

    Bacon-Wrapped Port Medallions with Garlic-Mustard Butter:

    Ingrediants:

    Pork

    Bacon

    Toothpicks

    Salt

    Pepper

    Pam Cooking Spray

    You can also cut the pork into "medalions" and wrap them in bacon (hold together with a toothpick). Season with salt and pepper and then spray top and bottom with Pam cooking spary. Then cook on the stove top on medium high in a load of butter for 6 minutes per side.

    Top the pork with Garlic Mustard Butter.

    Garlic Mustard Butter

    1/4 cup butter (room temperature)

    2 tsp Dijon mustard

    1 clove garlic, minced

    blend ingrediants in a bowl and then put a dallop on the top of each pork "medallion"

    These are super easy and look really fancy!

    I would grill the tenderloin and make a honey glaze for it, using some honey for the carrots, and warm up the baked beans and add a small amount of...you guessed it honey. They should all tie together well. Good luck.

    Apples? If you have some, put butter in a pan, add onions if you have, and apples and cook until soft. Pork, apples, and stuffing. Yum.
