The best October recipe ever?
Most of the time I answer, sometimes I ask, but this- I just have to share. As long as I can remember,( sometime in the very early 70's) My Mom made this every October around my birthday- a true family favorite. Sounds kinda weird ( raisins and beef???) but trust me on this one, it is wonderful. Serve with rice and a green salad and enjoy!
Jamaican Stuffed Pumpkin
2 Tbs Olive OIl
2 cups chopped onion
2 cloves chopped garlic
1 cup chopped green pepper
1/4 pound smoked ham
1 tsp salt, 1 tsp pepper,
2 tsp oregano
1 tsp vinegar
splash of tabasco
3/4 cups raisins
1/2 cup black olives ( or green if you like them... I don't) , sliced
2 tsp capers ( again, optional, I don't like them)
1 8 oz can tomato sauce
3 eggs
I pumpkin that will fit in your microwave....or your biggest stock pot.
1. Cook the pumpkin- cut the top off and scrape out the seeds and pulp. Either microwave or parboil until soft, about 15 minutes in the microwave or 15 min in boiling water.
Cook onions, garlic and green pepper in olive oil til soft, add ham and ground beef and brown until done. Add additional ingredients ( except eggs) and cook over medium heat for 10 minutes. Let cool to room temperature. Beat eggs and add to beef mixture. Stuff pumpkin with the beef mixture and cook in a 350 degree oven for 40 minutes. Enjoy and have a Happy Halloween!!

3 boxes jiffy cornbread mix
1 small container sour cream
6 eggs
1 cup green salsa
1 cup shredded cheddar
mix and bake at 350 for 30 minutes or until done-
the only thing I can think of is to add butter on top about 5 minutes prior to done. want a savory, not sweet cornbread- any suggestions?

Mom used to make "squares" with cheese, chilis, eggs??I can't recall, but this is what I have:
jiffy cornbread mix
eggs
sour cream
canned whole corn
canned creamed corn
green salsa
salt, sugar, pepper, etc...
need a side for an awesome chili- just not sure if this will work together, althought can't hurt trying... any ideas?
