I want a super moist cornbread/pudding recipe?

Mom used to make "squares" with cheese, chilis, eggs??I can't recall, but this is what I have:

jiffy cornbread mix

eggs

sour cream

canned whole corn

canned creamed corn

green salsa

salt, sugar, pepper, etc...

need a side for an awesome chili- just not sure if this will work together, althought can't hurt trying... any ideas?

    Easy Corn Pudding

    1 box Jiffy cornbread mix

    1/2 c. melted butter

    3 eggs, beaten

    1 can whole kernel corn, drained

    1 can cream style corn

    1 can diced green chilies

    1 c. sour cream

    1 c. shredded cheese

    Preheat oven to 375 degrees. Prepare a 1 1/2 quart baking dish with non stick spray.

    Mix cornbread mix, butter, eggs, both cans of corn, green chilies and sour cream together. Spoon into prepared baking dish. Top with cheese. Bake for 45 minutes.

    Custard-Filled Cornbread

    This recipe is magic. When the cornbread is done, a creamy, barely set custard will have formed and everyone will try to figure out how you got it there!

    15 minutes preparation time.

    Ingredients

    2 eggs

    3 Tablespoons butter, melted

    3 Tablespoons sugar

    1/2 teaspoon salt

    2 cups milk

    1-1/2 Tablespoons white vinegar

    1 cup all-purpose flour

    1/4 cup cornmeal

    1 teaspoon baking powder

    1/2 teaspoon baking soda

    1 cup heavy cream

    Preheat over to 350 degrees. Butter an 8 inch square baking dish or pan that is about 2 inches deep. Put the buttered dish in the oven and let it get hot while you mix the batter.

    Put the eggs in a mixing bowl and add the melted butter. Beat until the mixture is well blended. Add the sugar, salt, milk, and vinegar and beat well. In a bowl, sift or stir together the flour, cornmeal, baking powder and baking soda. Add to the egg mixture to the flour mixture. Mix just until the batter is smooth and no lumps appear.

    Pour the batter into the heated dish, then pour the cream into the center of the batter. DO NOT STIR. Bake for one hour or until lightly browned. Serve warm.

    That is exactly the recipe I was going to suggest:

    1 box Jiffy cornbread mix

    1 egg

    1 cup sour cream

    1 stick butter, melted

    1 can whole corn (or 1 cup frozen corn)

    1 can creamed corn

    1 small can chopped green chilis

    (I sometimes add chopped onions as well, but not necessary...)

    Mix all together, pour into a 9X14" pan, bake at 350 for about an hour.

    If you want, you can sprinkle some cheese on top of the casserole about 45 minutes to an hour into this and let it melt.

    To make it more of a dinner casserole, add cooked, chopped chicken breast meat or turkey.

    This is very high fat, but OH, so good!!!

    Tex-Mex Cornbread Salad

    45 min | 45 min prep

    SERVES 10 -12

    Ingredients

    1 package cornbread mix, prepared as directed

    2 (15 ounce) cans pinto beans or kidney beans, drained

    3 tomatoes, seeded and chopped

    1 bunch green onion, chopped

    1 small green pepper, diced

    2 jalapeno peppers, seeded and diced

    12 strips bacon, cooked crisply and crumbled

    2 cups monterey jack cheese, shredded

    34 ounces whole kernel corn, drained

    1 cup sour cream

    1 cup salsa

    1 cup mayonnaise

    1 package dry ranch dressing mix

    Directions

    1Use a deep glass bowl or small punch bowl.

    2Crumble half of the baked cornbread in the bottom of the bowl.

    3Top with half of the beans.

    4In a small bowl, combine the tomatoes, onions, green pepper, and jalapeno peppers.

    5Spread half of the tomato mixture over the beans, then sprinkle with half the bacon, half the cheese and half of the corn.

    6In another small bowl, stir together the sour cream, salsa, mayonnaise and Ranch dressing mix.

    7Spread half of the sour cream mixture ofer the corn (drop by spoonfuls and spread gently).

    8Repeat the process with the remaining ingredients.

    9Cover and chill for several hours before serving.

    10Garnish with a little shredded Cheddar cheese if desired.

    JIFFY CORN PUDDING

    1 can whole kernel corn, drained

    1 can cream corn

    1 stick butter

    1 (8 oz.) pkg. sour cream

    1 box Jiffy corn bread mix

    Melt butter in dish. Put in corn and cream. Mix together well. Sprinkle corn bread mix over corn and stir all together. Bake 45 minutes at 350 degrees.

    Use a box cake - Betty Crocker Super Moist Yellow Cake and add a box of Jello Vanilla Pudding to the mix. It will be devine and taste like "made from scratch".
