Favorite E-Z recipes you might want to try.

    Good Luck & enjoy.

    COLA CHICKEN

    (And more variations of recipe)

    (My personal favorites….using this recipe

are the ‘wings & ribs….ummm good!)

    4 skinless, boneless chicken breasts

    1 cup catsup

1 12oz. can cola (pepsi, coke, etc.)

Put chicken in a non-stick pan.

Mix together catsup and cola, pour over chicken.

Bring to a boil. Cover, reduce heat and cook 45 minutes.

(turning chicken a few times, while cooking...to prevent from sticking to pan)

Uncover, turn up the heat and continue to cook until the sauce

becomes thick and adheres to the chicken.

It turns into the most incredible BBQ sauce. Yummmm!

You can double the recipe and use more pieces of

chicken....wings...would be ideal...add some hot sauce....presto "Hot Wings"!

I have used Ribs, just as good.

I tried this recipe with 'meatballs'....was equally

    as good...served over rice.

I found another variation.....omit the catsup and add a small jar of Salsa (any variety).

I have tried using Salsa (omitting the catsup....not).

You'd think a recipe with only '3' ingredients couldn't be messed up....wouldn't you??

Well...while I was preparing to fix the 'Cola Chicken' recipe

using Salsa.....I was also trying to carry on a conversation with my

husband...(just proves...I can't do two things at once)....mixed Salsa & Catsup (before I realized I was supposed to leave out the catsup) & Cola........still turned out really tasty (to me)...might be a little sweeter than some of you like.

I fixed chicken wings, (using the above recipe)

but...I added the spices from a MILD (I don't care for "HOT") Buffalo Wings packet...(the kind you get to bake in the oven).....I thought it was really good.....(but you/I can't find a 'bad' way to fix chicken).

Finally....!! I fixed the 'SALSA' chicken......that's good , too.

Another (bright)idea.....I thought of trying......replace the

catsup with a bottle of Shrimp Cocktail Sauce...and add a bag of (pop corn) shrimp.....!

Fixed the shrimp with cocktail sauce......eh...wasn't all that

    great...was OK...probably won't be fixing it again.

Also tried beef stew cuts......that was pretty good.....I can see

    myself making this again.

Served both over rice.....think the stew cuts would have been just as

    good over noodles.

Gonna try some butterfly cut pork chopes…..or boneless chops…or pork steaks……should be good!

Try little cocktail wieners/sausages…for appetizers…..pork chops….pork steaks. (Maybe Vienna Sausages??)

    CRUNCHY ONION CHICKEN

1 1/3 cups French’s Original French Fried Onions

4 boneless skinless chicken breast halves

    1 egg, beaten

    LIGHTLY CRUSH:

    Onions in a plastic bag.

    DIP:

    Chicken in egg

    COVER:

With onion crumbs, press firmly to adhere to chicken.

    BAKE:

    Preheat oven to 400 degrees.

Place chicken on lightly greased baking pan.

Sprinkle with additional onion crumbs, if desired.

Bake for 20 minutes or until no longer pink in center.

    Mushroom Chicken

4 boneless/skinless chicken breast (or any pieces you like)

1 can cream of mushroom soup.

    1 can water

Place chicken in crock pot (or sauce pan for stove top cooking)

mix soup & 1 can of water together

    pour over chicken

cook on medium heat until boiling then reduce heat and cook until chicken is really tender & falling apart.

Serve over noodles or rice or dressing....or???

    POT ROAST

Your choice of beef or pork (to fit crock-pot)

1 pkg. dry Ranch dressing mix

1 pkg. dry Italian dressing mix

1 pkg. dry Brown Gravy mix

    1 cup water

    Put beef in pot.

Mix together all the dry mixes….then add water …pour over meat and cover & cook on high 4-6 hours.

    Until meat is tender.

The first time I mad it I didn’t have the Italian Dressing mix….so I added a pkg. of Onion Soup Mix….I have to say I liked that better.

If you use more water you might want to add more Brown Gravy mix….to make a thicker sauce. Was gonna add

potatoes and carrots…but never got around to it.

    My favorite recipie is

2 boneless chicken brest per person. I use 4

1 cup of bulls eye BBQ sauce (you can get it at walmart)

    1/4 cup of worchestershire sauce

    1/4 cup of veg oil

    1/4 tsp garlic powder

    a pinch of parsley

    *MIX ALL TOGETHER*

you won't beable to mix into a complete paste due to the oil but try yourbest.

Let the chicken marinate for about an hour or longer if you like

Pre heat overn to 350 and bake for 45 mins in a glass dish.

Don't forget to butter or PAM the dish. (I have done this lol.)

When there is about 15 mins left I throw on some shredded cheese.

It goes best with mashed potatoes and green beans.

Hope all goes well for you.

This is a easy recipie, it was the first meal I ever cooked on my own.

My mom used to make this when I was a kid and now it's my husband's favorite! It's really easy to make, reheats well, and you can even combine everything and bake later. The beautiful thing about this recipe is that you can just add more potatoes, chicken, and sausage if you need to feed more people. You really only need as much Italian dressing as will cover everything in the pan.

    Italian Chicken, Potatoes, and Sausage

10 small red potatoes, cut into chunks

6-7 Boneless, skinless chicken thighs (you can also use breasts, but don't cook it as long)

6 Italian sausage, cut into pieces(I like to use turkey Italian sausage)

1 bottle of viva seven seas Italian salad dressing (you can use any Italian dressing, as long as it's not creamy, but the seven seas is my favorite)

    1. Heat oven to 325 F

    2. Boil the potatoes until soft, then cool slightly

    3. Combine chicken, sausage, potatoes, and Italian dressing in a 13x9 glass baking dish

    4. Bake for about 45 minutes or until chicken reaches 165 F, stirring occasionally.

For extra yummyness, I like to put it under the broiler for the last 5 minutes. It makes the potatoes crunchy.

When I am pushed for time, yet I want to eat something good I always go for a hearty salad. Try making a taco salad. All you need is 1 lettuce head (cheaper than buying the shredded lettuce in the bag), taco seasoning mix, either 1 lb. of ground beef or shredded chicken, and all the ingredients you love. Follow the directions on the seasoning packet for the meat you choose. I like to top mine with cheese, crushed nacho cheese doritos and Catalina dressing. Good stuff and it definitely makes for some good leftovers!

If you like seafood, get some blackened seasoning and sprinkle generously on a nice fat tuna steak or some salmon and either pan sear it or grill it. Have a tossed salad and dinner rolls, some rice pilaf and spinach seasoned with a little olive oil and garlic powder.

    Or

Saute' about 4 large cloves of garlic, minced in a little olive oil, Put two large cans of crushed tomatoes in the pot (I love to use Parmalat Pomi in the containers..taste great, or redpack brand). Some crushed red pepper flakes, to taste and a few leaves of fresh basil (also to taste). Simmer for about 30 minutes and then throw in shrimp and scallops and cook only until the fish is cooked through and tender. you don't want to over cook them. Serve over Ziti with fresh grated cheese and fresh black pepper. Have a side salad and bread of course.

You will need one hour to totally prepare this, but it is simple and an easy clean up.

    Shake and Bake Pork Chops

    Scalloped Potatoes

    Corn on the Cob

Apple Pie & Vanilla Ice Cream

    Skillet Baked Ziti

To complete this recipe in 30 minutes, preheat your oven before assembling your ingredients. If your skillet is not ovensafe, transfer the pasta mixture into a shallow 2-quart casserole dish before sprinkling with the cheese and baking. Packaged pre-shredded mozzarella is a real time-saver here. Penne can also be used here.

    Serves 4

    1 tablespoon olive oil

    6 garlic cloves , minced

    1/4 teaspoon red pepper flakes

Table salt and ground black pepper

    1 (28-ounce) can crushed tomatoes

    3 cups water

    12 ounces ziti (3 3/4 cups)

    1/2 cup heavy cream

    1/2 cup grated Parmesan cheese

1/4 cup minced fresh basil leaves

    1 cup shredded mozzarella cheese

Making the Minutes Count: Measure the water and the pasta before you begin cooking. Prep the Parmesan and basil while the pasta cooks.

    1. Heat Oven: Adjust oven rack to middle position and heat oven to 475 degrees.

    2. Simmer Ziti: Combine oil, garlic, pepper flakes, and 1/2 teaspoon salt in 12-inch, ovensafe nonstick skillet and sauté over medium-high heat until fragrant, about 1 minute. Add crushed tomatoes, water, ziti, and 1/2 teaspoon salt. Cover and cook, stirring often and adjusting heat as needed to maintain vigorous simmer, until ziti is almost tender, 15 to 18 minutes.

    3. Add Cheese and Bake: Stir in cream, Parmesan, and basil. Season with salt and pepper to taste. Sprinkle mozzarella evenly over ziti. Transfer skillet to oven and bake until cheese has melted and browned, about 10 minutes. Serve.

    _Main:

    *Fettuccine Alfredo:

The recipe I'm giving you makes 6 servings. Cook: 15 Mins.

Essential Equipment: Dutch oven (about 4-quart size); medium saucepan (about 2-quart size)

    *8 ounces uncooked fettuccine

*1/2 cup (1 stick) margarine or butter

Boil uncovered 11 to 13 min., stirring frequently, until tender. To test fettuccine for doneness, cut a strand of fettuccine on the side of the dutch oven. While fettuccine is cooking, continue with the recipe to make the Alfredo sauce.

_2.Heat the Margarine & whipping cream in the saucepan over low heat, stirring constantly, until margarine is melted. Stir in the cheese, salt & pepper until the mixture is smooth.

_3.Drain the fettuccine in a strainer or colander, & place in a large serving bowl or back in the dutch oven. Poor the sauce over the hot fettuccine, & stir until fettuccine is well coated. Sprinkle with parsley.

_3.beat the whipping cream on high speed until stiff peaks form. Gently spoon the whipped cream onto the cream cheese mixer. To fold together; use a rubber spatula to cut down vertically through the mixtures, then slide the spatula across the bottom of the bowl & up the side, turning the mixtures over.Rotate the bowl 1/4 turn, & repeat this down-across-up motion.Continue mixing in this way just until ingredients are blended.
