how long can I store the following in the fridge before freezing or canning? cucumber, squash, zucchini?

    put some kitchen paper into your veg. box in the fridge and they WILL keep fresh for about 5 days. Make sure your fridge is set between 3-5 degrees. As these are all water based products they can be frozen without blanching. Zucchini freezes well if fried in olive oil first. I never can now no need to with a freezer. You can pickle to preserve the cucumber and zucchini if you prefer.

    Not more than a 2-3 days. This veggies get too mushy when you blanch them and will be awful when cooked. You can freeze them without blanching though, if you use them within 6 mths. I lost a whole batch of squash and had to just cook it and eat for 2 days b/c I left it too long in fridge. I don't know about the canning part. I only do blackeyes and stuff with that.

    attempt making some Tzatziki (greek yogurt dip) components (can not freeze however) 2 pints bitter cream (or Greek-form yogurt) a million cucumber, peeled & seeded, chopped finely, put in a colander to empty. This removes organic water from the cuc. 3 garlic cloves, overwhelmed juice of a million lemon a million/2 cup olive oil a million tablespoon purple wine vinegar a million tablespoon minced sparkling dill salt & pepper to flavor basically combination each little thing up mutually until it fairly is all mixed and the oil has emulsified into the yogurt/bitter cream. Salt & pepper to flavor. put in a resealable field. enable to 'sit down' interior the refrigerator for a minimum of two-3 hours earlier using to permit the flavors to come lower back out. Makes an incredible dip for pita, tortillas, greens, apply it to sandwiches and wraps. is going fairly properly with left over lamb to make a lamb wrap with sprouts, purple onion and tomato.

    Until they become soft. It just depends how they were stored in the supermarket, meaning if they were radiated or refridgerated. Check daily for beginning signs of softeness by gently squeezing with thumb and forefinger. The longer you store the veggies, the more vitamins they loose, even in the fridge.

    it depends on how old it is when u put it in the fridg, but 2-3 days i would check for softness

    If you buy those green bags quite a while.

    I found them at Bed Bath and Beyond (I think it was in the Beyond section)
