Is it better to cook and then maybe freeze expensive New York strip steaks or wait...and how long can I wait?

Yesterday, I bought some New York strip steaks that I was going to cook today so I put them in a marinade one hour ago (olive oil, lemon juice and herbs). But now, plans have changed and the people who were supposed to eat them won’t be here so I’d like to know if I should cook them anyway (and maybe freeze them) or if I could wait a few days to cook them…

Thanks…

It should be fine in the fridge if you just bought it yesterday. As long as you cook it in the next three days or so it will still be good. Just make sure to keep it in a bag or something, so that it doesn't lose it's moisture.

I just had the same situation. I marinaded my rib-eyes, then the plans were cancelled. I just put them in the coldest spot in my fridge and turned them so they would marinate evenly. If your fridge is really cold, 3 days should be fine. A little aging never hurt a good steak anyway. If it'll be longer than that, you may want to freeze them (not cooked thought)

Baked potatoe.. dont think there is any other way to have a steak. Bake, or boil a potato and let it rest. Slice it down the middle and take out the insides and place them into a bowl. In that bowl ad some yummy stuff.... whatever you like. I like cream cheese, bacon slices. Make a mush out of the insides and add the insides back into the potatoes, put some cheddar ontop and bake them to get a nice crust. Mash potatoes also works well (much less work involved) Scalloped potatoes also comes out nice. You will have to look up some recipes for this one though

Freeze them and defrost them later when you are ready to eat them. Things happen!! Plans change! Steaks of that sort are a bit on the high dollar side of life so we can't afford to waste them.

I would NOT cook them and then freeze them. They would still be good, but not as good as if fresh cooked. They tend to dry out when reheated.

Don't ever cook a steak, then freeze it.

    It will never re-heat well.

It'll be fine in your fridge up to 4 days.

If you cook them now, thawing & re-heating will ruin them.

Marinating in the frig is safe for a few hours anyway.

I'd transfer them to baggies, marinade & all, & freeze them.

Freeze them before you cook them....but if you don't, cook them within 4 days from when you bought them...health guidelines say 2-5 days depending on how cold your fridge is, but I would say the 5th day is too risky.

worse things can happen than having to eat steak for a week.
