First of all a guitar solo should complement the song and not overwhelm it. So many guitar solo's seem to take a life of their own and just go out of here. That being said I think there are 4 great guitar solo's...(and they are all different but really complement the song...
1st: David Gilmore in Pink Floyd's comfortably Numb. He gives you a taste in the first reprise but then in the end he just let's it go and it is a perfect ending and not to long. Perfect for the song
2nd: Jethro Tull's Aqualung. Again not overwhelming but just enough to really sound great. One of the best of all time.
3rd: Molly Hatchet's Fall of the peace maker is one of the longest and it really goes on but not to a point of sounding like a "spinal tap solo" It keeps integrity and builds and builds just perfect.
4th: Stairway to heaven. The guitar solo which all others are measured by.
There have been some great guitar solo's to be sure but I think these 4 set the Rock and Roll standard for what guitar solos could be.
One of the best I ever saw and it was on the old Johnny Cash TV show...was Johnny Cash, Carl Perkins and Eric Clapton just jamming to some old country blues song. However that would be in the blues section...and this is Rock and Roll

Longest Solo: Miranda, That Ghost Just Isn't Holy Anymore- The Mars Volta. The solo is at least 7 minutes long.

Yeah I love the Stairway to Heaven solo. My favorite is Texas Flood by Stevie Ray Vaughn. That man can tear it up.
