Main dish for potluck?

I volunteered to bring a main dish for a pot luck at work, and I don't know what to bring. the pot luck is for a baby shower and the girl said she didn't care as long as it is "meat," which is what she has been craving. Any good ideas that is easy and delicious? Any kind of meat will do...

    - BBQ pulled pork. Bring some rolls too.

    - Italian sausages with peppers and onions (again, bring some rolls)

    I have the most wonderful enchilada casserole recipe. It has been a favorite every where I have brought it.

    1 lb ground beef

    1 packet taco seasoning

    1 can enchilada sauce

    1 can cream mushroom soup

    1 pack hard taco shells

    cheddar cheese as much as you like)

    Sour Cream

    Cook ground beef and taco seasoning according to directions on packet. Align taco shells upright in a rectangle casserole dish. Fill shells with meat.

    In small sauce pan or microwave bowl whisk enchilada sauce and condensed soup bring to simmer. You may need to add a little milk if too thick. (make sure it is well combined)

    Pour sauce over shells and meat then top with cheese.

    Bake in 350 oven for approx 30 minutes. Add more cheese and broil till bubbly. Serve with sour cream.

    If you double recipe you can use 1 red and 1 green sauce.

    Can also sub celery or chicken for mushroom soup.

    hm, the easiest, no fuss meat I know of, that doesn't require any special gear; is baby pork rib slabs. I know- it sounds too messy for work, but it's not. Sounds difficult, it's not. Just put them in any 2inch deep pan, add water (about a half cup) and some vinegar (about a 1/2 cup not balsamic, but any other will do) then add liquid smoke. Cover with foil, bake 1 hour, drain off the liquids, brush on some BBQ sauce, recover, and bake another hour. Then let them sit til they cool enough to stop steaming and uncover and the bones slip right out one end. You can toss those and keep the slab intact, or pile it up & add more sauce, though I'd say not.

    The flavor is very delicate for a rib of any sort, and most don't even know they're ribs, OR pork, unless you tell them. Plus= they turn out right EVERY time. To me, they're very low maintainance, low mess factor in my kitchen, and I can practically ignore them.

    Meat loaf is inexpensive and easy. Use a mix of beef, turkey, and pork and you don't need the 98% lean expensive stuff. Some fat helps add flavor to the filler (bread,oatmeal,or rice). If you are feeding a big crew some dishes can get very expensive. Also good is a ham (8-10 pounds).

    Big Spicy Meatballs

    Makes 30 meatballs

    For the meatballs:

    4 pounds lean ground beef

    1 medium onion, minced

    2 slices soft bread, crusts removed and torn into small pieces

    5 cloves garlic, minced

    2 eggs

    1⁄2 cup chopped fresh flat-leaf parsley

    1⁄4 cup olive oil

    1 tablespoon Italian seasoning

    1 tablespoon kosher salt

    1 cup grated Parmesan

    2 teaspoons black pepper

    For the topping (optional):

    1 pound dry spaghetti

    2 cups marinara sauce

    1 1⁄2 cups ricotta (from a 15-ounce container)

    1/2 cup grated Parmesan

    1 teaspoon black pepper

    Heat oven to 400 F. In a large bowl, combine the beef, onion, bread, garlic, eggs, parsley, oil, Italian seasoning, salt, 1 cup of the Parmesan, and 2 teaspoons of the pepper. Shape the mixture into 30 meatballs. Place a wire rack on a rimmed baking sheet. Place the meatballs close together on the rack. Bake for 25 minutes.

    Meanwhile, cook the spaghetti according to package directions. Warm the marinara sauce in a saucepan over medium-low heat. Remove the meatballs from the oven. If desired, combine the ricotta and remaining Parmesan and pepper.

    Spoon a few teaspoons of the ricotta mixture onto each meatball. Broil 3 to 5 minutes, until the ricotta just starts to brown. Divide the spaghetti, sauce, and meatballs among individual plates.

    Make a chicken salad, and bring wheat rolls. Being it's not real heavy people will be able to enjoy other dishes as well. It's a good summer dish.

    White chili in the slow cooker always works for me. Use boneless pork, cube it and dust it with seasoned flour. Brown it and put it in the slow cooker with white beans, cumin, chicken broth, translucent onion, and salt & pepper. It is a wonderful comfort food, and the slow cooker makes it easy to keep warm and fresh while you're at work.

    You could make swedish meatballs.. They are easy to hold in the crock pot and relatively easy to make.

    Meatballs with this subtle spice flavor will disappear in minutes!

    1 egg

    1 c. soft bread crumbs (2 slices bread)

    1 tsp. brown sugar

    1/2 tsp. salt

    1/4 tsp. pepper

    1/4 tsp. ginger

    1/4 tsp. ground cloves

    1/4 tsp. nutmeg

    1/4 tsp. cinnamon

    1/2 c. milk

    Cooking oil

    Sour Cream Sauce (see below)

    Boiled potatoes or hot cooked noodles

    Minced parsley for garnish

    SOUR CREAM SAUCE:

    2 tbsp. butter

    2 tbsp. flour

    1 c. beef broth

    1/2 tsp. salt

    Dash cayenne pepper

    1/2 tsp. Worcestershire sauce

    1 c. (1/2 pt.) dairy sour cream, room temperature

    Blend ground beef, egg and bread crumbs thoroughly with brown sugar, salt, pepper, ginger, ground cloves, nutmeg, cinnamon and milk. Form into about 40- 1 inch small meatballs. Fry in hot oil, about 1-inch deep, until fully cooked, turning only once. Drain on paper towels. Prepare Sour Cream Sauce. Fold meatballs into sauce. Spoon into a chafing dish, stainless steel or enamel pan. Heat gently to serving temperature. Serve with boiled potatoes or hot noodles. Garnish with minced parsley.

    Makes 4 servings.

    Sour Cream Sauce:

    Pour all excess-oil from fry pan. Add butter to brownings. Stir in flour and cook until bubbly. Add broth, salt, cayenne pepper and Worcestershire sauce; cook, stirring until thickened and bubbly. Empty sour cream into a large bowl. Gradually add sauce, stirring constantly.

    It might be easiest to bring a ham..... you could cook it ahead, and it's good served hot, cold or room temp. Bring some rolls and assorted mustards

    you could do bbq beef sandwiches or shredded chicken sandwiches. Keep the filling in a crockpot and bring a package of buns.
