You sneak up behind someone, hold R1, and press Triangle. Equip the knife, pistol, or no weapon to pull this off. The controls are the same in Metal Gear Online as story mode.

you cut someones throat by un equipting your gun and holding the action button near him to grab him then press triangle to cut his throat thats all you need
