Green chilies in vinergar???
When i was living in India one of the aunties always served sliced green chilies with the food. I cannot for the life of me get this right! Are the chilies in white vinegar or maybe lemon juice?? Anyone know?? I do know that they were in a clear liquid. Sliced chilies and clear liquid...thats it!

How long do they need to set up? Should
i put them in the fridge while the flavours meld?

It's just green chilies in vinegar with a pinch of both salt & sugar. It's usually either white wine vinegar or I prefer to use cider vinegar. Try it with cider vinegar & let me know, I think that's the taste you're seeking!

I'm not sure about India, but in Thailand green chilies in vinegar is a very popular condiment. I eat this all the time and just made a fresh batch yesterday. Nothing more to it than chopping up some chilies and pouring vinegar over them.
