Besides the usual chocolate chip, any ideas for a great cookie to send by mail to my husband away from home?

Please provide recipes or a link to the recipe! Thank you!

I don;t have any specific recipes but rather some tips. Wrap each cookie individuall or at least 2 per wrapping. Use the pre-paid boxes from the post office. You can add as much weight as you want and only pay the flat rate of the box. And to add a little extra packing material that is still edible add hard candies after every layer. Shake them down into all the cracks and crevices that you can, add another layer and repeat. Also bubble gum would be good.

The hard candy is a good idea speciall if your hubby is in Iraq (as is the flat rate box becasue APO addy's count as US addy's). The soldiers can take them along as a way to keep the saliva going in thier mouth. I know that sounds gross but it's true.

If he's not over seas then just the thought of adding his fave candy will be a welcome thought.

I have a really good gingerbread cookie recipe. When I make them, they're gone before the day is out. They're soft and chewy, not hard like regular ginger snaps. You can find the recipe at www.recipezaar.com. The name of the recipe is "Soft Ginger Cookies." It also has a number: 46292. Just type either or in the search window once you have logged on to the recipezaar website.

I LOVE these cookies. They're more Holiday-ish, but awesome. I used PIstachios instead of macademia, and added more white chocolate chunks.

My mom makes toffee and white chocolate chip cookies which are delicious. Try experimenting around with different kinds of candy inside the cookies with your original cookie recipe

    Easy Sugar Cookies

    2 3/4 cups all-purpose flour

    1 teaspoon baking soda

    1/2 teaspoon baking powder

    1 cup butter, softened

    1 1/2 cups white sugar

    1 egg

    1 teaspoon vanilla extract

Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.

Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

    ----

    Cake Mix Cookie

1 package of cake mix (any flavor)

    1 large egg

    1/4 cup of oil

    1/4 cup of water

1 cup of chopped nuts, raisins, oatmeal, coconut, chocolate chips, M&M'S® etc. (anything you like in cookies)

Heat oven to 350 degrees. Combine cake mix, egg, oil, and water. Beat until well blended.

    Stir in remaining ingredient (s).

Drop by teaspoon about 1 inch apart onto greased cookie sheet.

Bake for 15 minutes or until done. Makes about 4 dozen.

    ------

Applesauce Oatmeal Cookies (Low Fat and Moist)

    Makes: 3 1/2 dozen

1 1/2 cups all purpose flour

    1 tsp. baking soda

    1 1/2 tsp. ground cinnamon

    1/2 tsp. salt

    1/4 tsp. ground nutmeg

3/4 cup firmly packed brown sugar

    1/2 cup Splenda

    1/4 cup margarine, softened

    3/4 cup applesauce (unsweetened)

1/4 cup egg substitute or 1 egg

    2 Tbsp. fat-free milk

    2 tsp. vanilla

3 cups quick or old fashioned uncooked oatmeal

1 cup diced (can use food processor, much easier) dried mixed fruit or raisins

    Preparation:

    1. Heat oven to 350 degrees. Lightly spray cookie sheets with cooking spray or grease lightly with cooking oil.

    2. In medium bowl, combine flour, baking soda, cinnamon, salt, and nutmeg; mix well. In large bowl, beat sugars and margarine until well blended. Add applesauce, egg, milk and vanilla; beat well. Stir in flour mixture' mix well. Stir in oats and dried fruit; mix well. (Dough will be moist.)

    3. Drop dough by rounded tablespoons onto prepared cookies sheets.

    4. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store in tightly cover container.

    Notes:

These cookies are moist and chewy; low in fat and low in sugar. I like them better the next day when they are moister and even more flavorful.

Plan on try making these with the brown sugar Splenda and adding powdered flaxseed (good source of omega-3 fatty acids).
