Anyone have a delicious and easy chicken recipe with few ingredients?
I'm having my boyfriend over for dinner Thursday. I had planned to make a big meal when he came over with his friend, so that his friend and my roommate could meet and I bought a ton of ingredients for it, but now my boyfriend is asking whether I'm making dinner just for him this Thursday. I feel awful saying no since he's coming directly from work, so I want to use as little of the things I bought for the big dinner as possible, even buying a few extra things if I need to. Here are the things I'm willing to use and have:
3 chicken breasts
spaghetti
tomato sauce
parmesan cheese
caesar salad
a ton of spices (included red pepper flakes, tarragon, oregano, bay leaves, etc.)
EVOO of course
plain bread crumbs
Does anyone have an easy (but impressive) chicken recipe where I would need to buy limited ingredients? It needs to taste and look good, but be cheap to make.

Here's a good recipe for chicken parmigiana. If you have an egg, I think all you'll have to buy is mozarella cheese. I think I found this on all recipes, but I have lots of great recipes on my blog at http://christiscollections.blogspot.com/
1 egg, beaten
2 ounces dry bread crumbs
2 skinless, boneless chicken breast halves
3/4 (16 ounce) jar spaghetti sauce
2 ounces shredded mozzarella cheese
1/4 cup grated Parmesan cheese
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
Pour egg into a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into egg, then into the bread crumbs. Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until no longer pink and juices run clear.
Pour 1/2 of the spaghetti sauce into a 7x11 inch baking dish. Place chicken over sauce, and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top and return to the preheated oven for 20 minutes.

Roll chicken breasts in tomato sauce. Place chicken on foil in baking dish and sprinkle with garlic and oregano. Bake uncovered at 350 degrees for 45 minutes. Of course, you can tweak the above recipe with whatever else you have on had, but there's a good starting point for you.

You could make Chicken Parmigiana

or skip the Parmesan step and cook boneless skinless chicken breasts in a skillet with a little oil about 4 minutes per side on medium heat. Add one chopped onion, cook briefly and add 1 cup of chicken broth. Cook about 3 minutes then add one jar of spaghetti sauce. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes. Meanwhile, cook some spaghetti following directions on the box. Drain the pasta and serve the chicken and sauce over the pasta.

one thing i love is what my grandma does for me.
she cuts up chicken into bite sized chunks and fry's them with butter and garlic (optional). you can also do this without cutting them up.
and to make it look fancy maybe put some of those spices or leaves, pepper. anything you want, i bet it would even taste good with the speghetti, you might want a little more butter with speghetti though.

marinate the chicken in the spices/herbs and evoo, make the spaghetti and sauce, have som ewarm crusty bread and the salad.

yeah make a chicken cesear salad. its healthy and filling. um you can also serve it with warm chicken or cold. just season the chicken and put it in the oen when its done slice it in 2" long strips and toss the salad.
or you can make a parmesean breaded chicken breast with marinara sauce.
