I need EASY, healthy meal and snack ideas while nursing my baby
I'm a lacto-ovo vegetarian and nursing my 6 week-old baby. I have no time for cooking anymore and I've been gravitating toward carbs and junk food, especially when I'm up in the middle of the night. I need ideas for foods with little or no preparation and hopefully some protein and other nutrients.

Celery w/ peanut butter and raisins makes a yummy snack.
Cottage cheese is a good protein source. Mix some w/ yogurt and top rice cakes with it.
"Bake" potatoes in the microwave. Poke holes in the potato, rinse, and wrap damp potato in plastic wrap. Microwave for 5 minutes and top w/ salsa and black beans or the standard butter and sour cream.

For a midnight snack, you should try edamame, which are soybeans that are still in the pod. You can buy them frozen and all you have to do is boil them. Sometimes they are even packaged so that all you have to do is pop the bag in the microwave.
