Low Sugar Cereal Bar Recipe

Hi Guys, I need a recipe for a cereal/breakfast bar that is low in sugar. I am not looking for a granola bar recipe, more like a nutrigrain type deal, but with fresh ingredients and low in sugar. All of the "healthy" options in the grocery store are LOADED with the stuff. Any help is greatly appreciated.

    Low Fat Cereal Bars

    Ingredients

    * 1 cup rolled oat

    * 1 cup Rice Krispies

    * 2/3 cup chopped apricot

    * 3 tablespoons roasted sunflower seeds (I didn't bother toasting them)

    * 1/4 cup toasted coconut (I don't toast it)

    * 1/4 cup brown sugar, packed

    * 2 tablespoons vegetable oil

    * 3 tablespoons honey

    * 2 tablespoons peanut butter

    * 1 tablespoon vanilla

    Directions

    1.

    Melt oil, honey, peanut butter in microwave just until easy to mix up, watch carefuly, probably 20 seconds or so.

    2.

    Mix in vanilla.

    3.

    Mix all ingredients together and press down well into 8" square pan sprayed with pam.

    4.

    Make sure you press down firmly.

    5.

    Bake at 350°F for 20 minutes.

    6.

    Let cool before serving.

    You may be getting the sugar mixture too hot. It is more like a hard candy then. Try adding some marshmallows, that is a different type of sugar and may change the texture. (If you are attempting to keep this rather healthy and it appears that way since there is no marshmallows or butter) and you don't want to add the marshmallows try adding the honey after your peanut butter and brown sugar have melted. You may also want to try adding other things like dried fruit and other nuts and give up on attempting to get a soft bar and just enjoy a crunchy granola type bar. Or break it up and make a trail mix type snack. It does sound very good!!
