Are you asking about bananas or something else? If its bananas you can do anything that you can with ordinary bananas
BTW - if you don't know what I am talking about - ladyfinger bananas are a smaller sweeter type of banana and available in Australia - I am not sure if they are available elsewhere in the world - if not then you have learned something new today
on further reflection I think that you maybe talking about sponge fingers - so here is an idea for you - serve them with stewed or fresh fruit and either whipped cream or ice cream as fingers on the side of each serve
Another idea make what is called fruit charlotte with them - here is a link for you using them but use the fingers instead of the bread

Chocolate Icebox Cake
INGREDIENTS
8 (1 ounce) squares German sweet chocolate, chopped
3 tablespoons water
2 egg yolks, beaten
2 tablespoons confectioners' sugar
1 cup heavy whipping cream
2 egg whites
1 (12 ounce) package lady fingers
DIRECTIONS
Line two 8 x 4 x 3 inch loaf pans with waxed paper.
Beat the egg whites until stiff. Beat the whipping cream until soft peaks form.
Melt chocolate in a double boiler. Blend in water. Remove from heat, and add egg yolks; beat vigorously until smooth. Add sugar, and mix well. Fold whipped cream into chocolate mixture. Fold in stiffly beaten egg whites.
Separate ladyfingers. Line bottom of each pan with single ladyfingers. Cut remaining ladyfingers in half crosswise, and use to line the sides of the pans. Fill with chocolate mixture. Chill 12 to 24 hours. Unmold. Serve with additional whipped cream if desired.

My mom used to make a dessert with ladyfingers and Jello. i know it sounds crazy but it was really good.
Make the Jello and while it's still hot, soak ladyfingers in the jello in layers. Pour all the jello in and just let the ladyfingers soak up the liquid. Then set it in the fridge to cool and set.
Once it's set, it's like an "icebox cake", scoop it out and top with whipped cream.

I use them the same way I use and pound cake or angel food cake. Mostly I make triffles or banana pudding with them or even bread pudding
