I like little round potatoes and onions. Fresh green beans are really good too. Just don't put them in until the last half hour or they get all mushy.

My favorite thing is to add 2-3 carrots, a small onion sliced in circles, and about 4 potatoes cut into 8 pieces from the top to make wedges. Use the golden type for a firmer result.
I precook these Carrots first in a pan with a good cup or two of water on top of the stove until somewhat soft. When roast still needs about 30 minutes I toss the veges all around the roast. Then I baste the meat and veges a couple of times to get the flavor all over the veges.

I usually put onions, potatoes, carrots and a small amount of broth in the roasting pan along with the meat...and cooking at lower temps for long time is the way to ensure juiciness. 250 to 300 as opposed to the traditional 350. Just use a meat thermometer to tell if it is done and pull it out 10 degrees lower than the desired temp and let it rest covered in foil for 15 minutes before you slice it.
120°F to 125°F, (49°C to 52°C) for rare, 130°F to 140°F (55°C to 60°C) for medium rare, 145°F to 150°F (63°C to 66°C) for medium, and 155°F to 165°F (68°C to 74°C) for well done (Note: 120° is a pretty rare roast).

When we have roast at my house my mom usually does an onion side. She'll put the roast in the oven and have quartered onions next to it.. then she roasts some onions separate. We also always have some rolls for dipping and mashed potatoes..

to cook with the roast u can put potato slices with it to bake and u can mix carrots with it
if u r cooking seprate then u can make what ever u heart desires!
potatos, carrots, broccoli, green beans, corn, beans and etc.

try some roasting celery, potatoes mushrooms and some onions . you don't have to eat the celery but it adds flavor tot the mix. mmmmm....

my mom would make roast with carrots, mashed potatoes & gravy, and bread.

gravy (jarred OR powdered + water)
potatoes
carrots
onion, celery, garlic, salt & pepper
Throw all into a crockpot, cook.
Eat with: bread, rolls, biscuits, salad, even past or rice.
