Or should I take classes in some other subject?
I've asked a variation of this question before but only got 1 answer. =(
I was planning on double majoring in chem. eng. and applied math.

Well, a lot of those could potentially help. Partial diff eq wouldn't hurt, I don't see much application for linear algebra, topology, or geometry type classes.
I am an electrical engineer though so I am just guessing based on what I would think you would use the most.

You most likely can get something from all of them. Why not major in chemical engineering with a minor in mathematics.

Your adviser would know better than any of us. Just go and ask him/her instead, and you'll get a much better answer.
