The problem with pork is parasites. Almost non existent in developed countries. The way to kill parasites is to heat to 140 F OR put in a freezer. The colder the freezer, the less time it takes. I make sausage and some kinds are not heated at all, just salted and dried. Always start with pork that has been in the freezer for a couple of weeks. For your purposes, parasites are extremely rare. Is pork liver any good? I just started eating liver and I do like it rare.

red meat is the only meat you can eat if its still pink in the middle... Pork and chicken should always be cooked all the way through, even the livers. If you do get sick you'll most likely just vomit it back up and feel like hell for a day or two. If you have already eaten it and you dont feel sick then you're probably ok. Just wait it out and drink lots of water.

Pork should always be cooked completely through. Pork contains both bacteria and parasites which can be passed to a human host if the food is not properly cooked.
